In the DongDing Alley, there are several old tea farmers who still insist on making tea in the traditional way. Beside folloing the old methods of making tea, even the tea making rooms are still in the old wooden form. According to Su's explanaton, the wooden room lets the tea have contract with the outside air in small amounts when theta is just sitting in the room, which is an important elements of making good tea. One of the most important parts of the tea making process is that they still use their hands to rub the tea with a cloth.
